Tomato Herb Garlic Sauce

Replaces the ketchup normally put on meatloaf. Can also be used as a pasta sauce.

Ingredients

6 to ??? cloves of garlic – chopped
olive oil
salt & pepper
any ripe tomatoes, preferably Romas, diced - Note: drain if too juicy to remove the liquid
chicken stock – very small amount
herbs – preferably fresh or dried – use one type or mix to taste
shredded fresh basil
fresh thyme
fresh oregano

Steps

Step 1
Sauté garlic in olive oil over medium low heat for about 1-2 minutes only.
Step 2
Add chopped tomatoes, salt & pepper and dried herbs only.
Step 3
Bring up the heat until it starts to bubble, then reduce to medium low.
Step 4
Stir occasionally until sauce is reduced to the consistency you prefer, thin for some recipes, thicker for others.
Step 5
If using fresh herbs, add only during the last 1-2 minutes of cooking.
Step 6
If too thick, dilute with small amounts of chicken stock.
Step 7
Serve over slices of meat loaf.
