Replaces the ketchup normally put on meatloaf. Can also be used as a pasta sauce.
Sauté garlic in olive oil over medium low heat for about 1-2 minutes only.
Add chopped tomatoes, salt & pepper and dried herbs only.
Bring up the heat until it starts to bubble, then reduce to medium low.
Stir occasionally until sauce is reduced to the consistency you prefer, thin for some recipes, thicker for others.
If using fresh herbs, add only during the last 1-2 minutes of cooking.
If too thick, dilute with small amounts of chicken stock.
Serve over slices of meat loaf.
