This is a the fan favorite at Dallas Cat Lady Adoption events! It’s a long day: set up, working with the public, helping socialize the cats and kittens that are available for adoption, heavy weekly cleaning and sanitizing of the cat’s condos and general frivolity. We get hungry! Each week, there’s a protein snack for the volunteers to nibble on. This is the runaway favorite recipe.
Roast your chicken with your choice of spices or use store bought rotisserie chicken. I use 1/2 a six pound roaster that I baked with salt/pepper/garlic/lemon and dill. Cube the chicken.
Melt unsalted butter. Add Frank’s Original Hot Sauce (yes, it’s important), cayenne pepper and Worcestershire sauce. If you want it spicier add more cayenne, not more hot sauce. Add to chicken and toss.
Add mayo and sour cream (adjust as needed depending on how much chicken you use), and as much blue cheese as you want. This group *likes* blue cheese. Served on the go on Townhouse Crackers.
