Let me be clear…this is not a cost effective solution. It takes ingredients and time! Buying a bottle of ketchup or catsup is cheap and easy. This is for those who may have left over tomatoes from a garden or someone who enjoys knowing what is in your condiments…or someone like me who just likes to experiment in the kitchen!
I usually put some into a standard restaurant dispenser and keep it in my fridge then can and store the rest.
Place all ingredients in large sauce pan and reduce over medium heat until mixture becomes very thick. Usually about an hour or so.
Puree mixture in a blender and strain through a mesh strainer, pressing the sauce through the strainer using a silicon spatula or wooden spoon.
Continue to press the sauce through the strainer until only the solids remain in the strainer.
Scoop up one teaspoon of the solids and mix it back into the strained ketchup.
Chill and store in the refrigerator. Enjoy!
